
Last night we had dinner at our friends Ben and Rebecca’s house. Rebecca made the most amazingly delicious chicken dinner I have ever eaten, and I am posting the recipe right here! Keep reading…

Before we got there, Rebecca prepared for our visit by having her toddler daughter Ella scrub the dining table. Ella really threw herself into the job, scrubbing so quickly that her left arm was nothing but a faint blur. That table was well polished.

And here are our hosts, Ben and Rebecca. I’m posting their photo so that if you ever chance to see one of them, you can introduce yourself, make friends, and get yourself invited for dinner. Also, they’re a fine couple of folks. But you want that recipe, don’t you? Okay, here it is:
Honey Pecan Glazed Chicken
6 boneless skinless chicken breasts
3 cups buttermilk
vegetable oil for fryingSeasoned flour:
1 1/2 c. flour
1 tbsp salt
1 tbsp garlic powder
1 tbsp cayenne pepper
1 tbsp white pepperHoney Pecan Glaze:
1/4 lb clarified butter or butter flavored oil
1/4 c. pecans, chopped
3/4 c. honeyMix all seasoned flour ingredients together. Dredge chicken in flour, dip in buttermilk, then in flour again. Place each chicken breast in deep fat fryer (350 degrees) until golden and cooked thoroughly. Drain briefly and serve topped with honey pecan glaze.
Honey Pecan Glaze: Melt butter or oil in pan. Add pecans and heat together briefly. Add honey and mix well. Hold in double boiler if not serving immediately.
I had two servings, but still saved room for dessert, a deep dish cherry pie.

This view from the top shows the delicious crumbly crust, but doesn’t show just how, well, deep the dish was. I swear this pie was three or four inches thick! And the cherries tasted like fresh cherries, not like syrupy pie filling. A perfect pie. (No recipe, though. Sorry.)

ALright Sean, here’s the deep dish pie recipe:
2 cans pie filling of your choice
3/4 stick butter or margarine
1 cup sugar
1 cup flour
1 cup milk
2 tsp baking powder
t tsp vanilla
lightly grease inside of casserole baking dish. Pour in pie filling.Mix all remaining ingredients but butter together. Put in pan. Spoon pie filling on top, and slice butter on top of crust. Bake at 350 for about an hour.
